Persian Salad Olivieh
HISTORY ~
This salad was invented by a French Chef, M. Olivier. He served it in Moscow around 1860. Variations, sometimes called “Salade Olivier” or ”Russian Salad” abound worldwide. Persians love to make this salad with plenty of mayo & they also spread the top of the salad with mayo & veggies ~ & even fresh flowers for adornment. Salad olivieh on slices of french baguettes can be addicting. This Salad Olivieh is slightly different than the traditional one. While all the ingredients are the same, this recipe cuts down the prep time considerably.
Ingredients:
3 medium large potatoes, cooked
3 eggs, hard boiled
2 cups shredded chicken
2 cups frozen peas and carrots (optional)
19 oz can of Persian pickles / or Dill pickels of your choice
Dressing
2 cups mayonnaise
1/4 cup fresh lime or lemon juice
1/8 cup olive oil
salt to taste
*pepper (optional for Hammer type Scandahovians)
(Serves 4-5 people)
First short cut: Pick your favorite roast chicken at a deli.
Or cook your chicken from scratch ~ Hmmm, flavor from roast chicken is really good!
Remove bones and skin and shred or dice the chicken.
Give it a rough chop to make the pieces a bit smaller.
Small dice the eggs and pickles.

Then dice the potatoes, making them slightly bigger than the pickles and eggs.
In the traditional Salad Olivieh the peas and carrots are cooked.
The secret to a good Salad Olivieh is to not cook the peas.
So I took this advice a step further and also saved the time spent on cutting the carrots.
Add the peas and carrots raw ~ straight out of the bag.
* Morvari family variation / do not add carrots or peas.
Place all ingredients in a large mixing bowl.
In a different bowl, mix the dressing ~ mayo, mustard, lime or lemon juice, oil, salt & pepper.
Mix ingredients & dressing very well.
Taste & check seasoning. Cover and let rest in the fridge for a few hours allowing the flavors to come together. Salad Olivieh is an excellent addition to your appetizers table, a great side dish, and a fantastic choice for a picnic.
